The composition of each spot in the family property, with the different textures of the soil, gives each variety, each vine, a character that defines it. The altitude above sea level, the exposure to the sun and the winds, the age of the vines, and the rains that the sky gives us when it feels convenient, also play a part in the formation of this character.

We pay attention to all these features and the knowledge of our land helps us to work with more and more precision in the vineyard, vintage after vintage. And the incorporation of more specialized tools in the winery, such as the Coquard vertical press, ensures that the uniqueness of each plot is reflected more and more faithfully in the bottles of the single vineyard parcel wines.

Traditional root technology

On the house we have two other Coquard presses, the legendary manufacturer devoted to the producers of quality sparkling wines, these of inclined plate, of up to 8000-kg, which transform the fruit into a very clean must and allow us to carefully adjust the fractions. When we talk about must fractions, we mean the different quality values that the juice shows at different times of pressing: the first must of an extraction is not the same as that of the central moment of the process, taking into account that a pressing can last for hours.

The vertical press allows us to work with loads of between 1000 and 4000 kg and works simple: the grapes are poured from above and, once full, the hinged lid is lowered and begins to exert pressure on the fruit, in series of several cycles each, to which we can adjust in detail the duration time and the pressure applied to each variety, to adapt it to the thickness of the skin and its exact point of maturation. Between series, the fruit must be manually distributed over the entire surface to ensure that the pressure is homogeneous.

Although the origin of this type of press is lost in ancient times, the piece we have acquired incorporates technology that allows digital control of the different functions, approved food-grade materials, total ease of cleaning and water and energy savings; characteristics that weighed in our decision.

Care for details

From the first meeting with Lydia and Claude Bourguignon to the exhaustive soil analysis by Joaquín Cámara, through key line planting, respect pruning grafting in the field, goblet training of the vines all our practices aim to ensure that the next generations can live from the land and for the land, as we do.

To guarantee the acidity that allows for long aging in our historic cellar, we harvest by hand at night in small crates to preserve impeccable grapes and press whole clusters.

We are convinced that this vertical Coquard will help us to preserve the essence of the Gramona family’s way of doing things, this sum of small details that build the character that identifies our wines.
