La teor\u00eda del firmante y catador de <em>Esa Gu\u00eda<\/em> era que los vinos espumosos del Pened\u00e8s ten\u00edan que ser j\u00f3venes, frescos y afrutados. En ning\u00fan caso deb\u00edan intentar la proeza de las largas crianzas de los iconos espumosos de Francia.<\/p>\n<p><em>Aquella Gu\u00eda<\/em> era la m\u00e1s reconocida del pa\u00eds y sus entonces responsables no asistieron a la primera cata vertical que Gramona hac\u00eda en Madrid, en la que compartimos nuestra teor\u00eda de la capacidad de nuestros vinos para ser un gran espumoso. Era la primavera del 2008. La presentaci\u00f3n y cata de nuestros Celler Batlle y III Lustros de varias a\u00f1adas fue todo un \u00e9xito.<\/p>\n<p>Nos qued\u00f3 la espina de <em>Aquella Gu\u00eda<\/em>, as\u00ed que les llamamos al d\u00eda siguiente. Accedieron a hacernos un hueco en su agenda y nos reunimos informalmente en sus oficinas del Viso, en Madrid. Nos presentamos con dos botellas: un Celler Batlle del 1997 y otro del 1998. El <em>Sr. Pe\u00f1\u00edn <\/em>nos recibi\u00f3 y pronto pidi\u00f3 a su equipo que preparara una cata a ciegas con nuestras botellas y unos <em>champagnes<\/em> que guardaban en la nevera.<\/p>\n<p>Nuestro anfitri\u00f3n escuch\u00f3 nuestras tesis sobre porqu\u00e9 un espumoso del Pened\u00e8s pod\u00eda tener la capacidad de evolucionar largos a\u00f1os hacia la excelencia. Lo entendi\u00f3, pero la cata a ciegas fue definitiva. El <em>Sr Pe\u00f1\u00edn <\/em> y su equipo de cata prefirieron nuestros Gramona frente a los <em>champagnes<\/em> de alta gama que, sin nosotros saberlo, acab\u00e1bamos de catar.<\/p>\n<p>Al a\u00f1o siguiente, <em>Aquella Gu\u00eda<\/em> rezaba por primera vez, &#8221; Con un vino espumoso de 10 a\u00f1os, Gramona alcanza la expresi\u00f3n de los mejores <em>champagnes<\/em>&#8220;. Los medios especializados del pa\u00eds empezaron a reconocer las posibilidades de nuestros vinos, lo que nosotros llamamos \u201c<strong>el cambio de paradigma<\/strong>\u201d. Desde aquel encuentro, los equipos de catadores han cambiado, la direcci\u00f3n de <em>Aquella Gu\u00eda<\/em> tambi\u00e9n.
