Onion skin colour.
The wine’s fruit comes through in the form of pear, apple, pink pomelos, and wild strawberry aromas. Mediterranean woodland herbs such as thyme, fennel and laurel. A floral hint of broom. The wine has a very spicy personality, reminiscent of Sichuan peppercorns. Pronounced mineral character.
Fresh on entry, coating the palate. Good structure. Very pronounced, well-balanced, excellent acidity on the finish. Harmonious with nice final taste sensations.
This wine pairs well with a wide range of dishes. Excellent with appetisers. It goes very well with specialty cuisine, from Japanese (nigiris, sashimi, makis) to South American (ceviche, adobos, escabeches). Its lovely acidity makes it a good match for rice dishes, such as paella and risotto, marmitako (Basque tuna stew) and fish/seafood stews in general.
